Normally the coffee "cherry" contains two seeds (beans) that develop with flattened facing sides, but sometimes only one of the two seeds is fertilized, and the single seed develops with nothing to flatten it. This oval bean is known as peaberry. Only 5% of beans harvested as peaberry coffee and it's typically sweeter, lighter, and more flavorful than regular beans from the same crop. Baba said that peaberry beans roast better and more evenly than flat beans.
